WINTER - THE SEASON WHEN THE CHEF SHOW CHARACTER AND SHOW CREATIVE SKILLS
We are in the middle of the season, where roots and danish vintner vegetables fills the menu´s in restaurants with seasonal fresh ingrediense. Since the first roots sticking out of the ground in late summer it is a large number of roots which take up more and more on the menu right now. This requires a talented chef who also manages to think creative thoughts.
The menus on Svineriet is absolutely not Scandinavian. Our menus are based on what we have right outside the door. Good Danish ingredients and dishes with roots in the new Danish cuisine. Not only that. We look around and take detours to many parts of the world and put together a menu that both strikes a tone that is local, and with inspiration mainly from the southern part of Europe. Our task is to collect inspiration and make it our own style on the plate.

STARTERS
Pike Perch marinated in Thy bog brew and
roast pork belly, egg, smoked mayonnaise and leafs from the danish westcoast
Cod in three structures
Bisque - baked, fried roe.
In crumble of cauliflower, broccoli and black sesame
Lobster in two versions
Raw marinated and fried. Serve with celery and danish cranberries
Juniper marinated lamb, artichokes, bernaisecrem and tarragon
MAIN DISHES
Roast turbot, smoked potato, cabbage, nuts and browned butter
Roasted Onglet of well-hung Danish ox
and braised beef brisket, pumpkin and sauce bordelaise
Grilled fillet of Danish freerange pig and braised cheek.
Salt Baked beet´s, prugnes and crispy skin
CHEESE
Six handcrafted cheeses from small Italian cheese mongers.
Served with quince compote and flatbread
All cheeses are imported from Italy's own best cheese affinatør

Before the show you can book a table 17.30 to 18.00

and leisurely warm up for a trip to the theater, for a concert or to the movies
